Are you saying that you've got two separate configs which you can switch between with some kind of hotkey? Because I eould like something like that, how do you do it?

Quite simple.
In ColumnsUI enable sidebar, then you enlarge the sidebar (so the playlist is not visible because the reduction of foobar window).

Manage the sidebar as you want then chose a hotkey for the command "Show Sidebar" (use "Search Command" to find this). Finish.

My first picture is the normal view of my foobar, and pressing a chosen key, you can view sidebar (without playlist, not visible but always present).

It's a side effect of his Windows XP visual style, Codename Opus by b0se. Search Deviant Art if you are interested in obtaining it. Of course, like all unsigned visual styles, you'll need to either modify Windows to accept unsigned visual styles or get yourself a copy of StyleXP.

Now, if you mean the vertical volume bar, I believe that is a UI extension for columns UI.

I can't enable simple stereo for some reason. When I right click on the a panel, the only vis available is the original one for columns ui. Any help?

thats because it does not work in the panel. it opens up in its own window
