I am currently using a Zune 30 as my mp3 player. I would like to upgrade and am interested in Android, so I thought I'd just buy a used phone and use it for an mp3 player and apps (sort of like an Android iPod touch). I was looking at the galaxy s2 as it has a dual core processor and the s3 just came out, so I would think the used prices would go down. However, I was reading online that the Yamaha DAC it uses is suboptimal. For instance the tests here: Samsung Galaxy S2 Tests. However, I don't know enough about audio to determine how much that would effect me. So I would like to know if there would be an audible difference with my headphones. I use Koss Portapros and Etymotic er-6is.

There are a lot of Galaxy S2 models with different chipsets. Unless you're buying the exact one Ananadtech tested, those results won't apply.
