A way to sort tags in alphabetical order within the files? (I'm not sure how the tag structure works, or if that's possible...)

I'm pretty sure foobar2000's masstagger and other features can handle this.

But, could you provide more details on exactly what you want to do?

You should check out foo_infobox. It's a really great replacement for the original infobox.
