What dll or does iTunes use to encode to AAC format? Is it possible use EAC and under the "Compression" Section use iTune's dll and rip and compression directly into aac. Just like you can with "lame.exe" with --alt-preset standard.

This would be awesome.
Thanks.

iTunes uses the QuickTime encoder. You could try Qutibacoas.

Another option would be to rip in eac to a wav image, and then load the .cue file up in a virtual cd-rom drive such as Daemon Tools. iTunes would then recognize the image as a CD and you import as AAC files with tags and everything, while still having the security of EAC.

I believe it's called quicktime.dll - I don't have access to a Windows machine to verify this. You can find the full SDK on http://developer.apple.com/quicktime/. You should be aware, however, that the QuickTime SDK is in C and far from user-friendly.
