I'm using 0.95pb4 and all of my files have "Encoded by EAC" in the "Encoded by" field of the ID3 tag. It's kind of bugging me, but I can't find an option to remove it. Is there a way to have EAC/LAME not put that there?
Go to "Compression Options", click on the Offset tab and then erase the text in the box at the bottom of the window. Click OK.

edit: Misread your post, however, see if the option above does this.

I encountered this issue with Exact Audio Copy myself. I too didn't like how it added "Exact Audio Copy" into the Encoded By field. Doing the above does remove the "Encoded by Exact Audio Copy" in the Comment field but not the Encoded By field. To fix this I now use LAME to tag my MP3s using this command line:
--alt-preset standard --tt "%t" --ta "%a" --tl "%g" --ty "%y" --tn "%n" --tg "%m" --pad-id3v2 %s %d
If you use the above command line remember to uncheck the ID3 Tag checkbox in the compression options.
