I currently have a folder.jpg for most of my albums, and want to add the cover image to my mp3 tags for display on my DAP. Is there a good app/ easy way to do this?
Also, is there a way to do this automatically in the future so that when I transcode my FLAC files with a folder.jpg the album art would be included in the tags of the transcoded mp3s?

You can try Mp3tag's action type 'Import cover from file'.
