I've gone with a fairly simple layout with my Foobar. You can add trackinfo or playlists by adding it as a tab to share space with the album art. Personally, I just use album lists.
I'm used to MusicMatch, and like the idea of either a docked or pop-up albumlist view. Unfortunately, I couldn't style the pop-up the way I wanted, and the docked feature just doesn't work the way I want. Specifically, the area you press to expand/collapse the dock needs to be larger, and I'd like to be able to have the player expand in size to accomodate the dock as opposed to being confined to the window size.
At any rate, to achieve the same effect, I simply used the Maximize/Restore buttons. When the player is maximized, the Albumlist becomes visible as in the image below.

But if you hit restore, the player becomes smaller and only the albumart and playlist is visible.

I manually sized the player for the slim version, and since those settings are saved, the rest was easy. Just set the albumart to "locked" and the albumlist won't try to get in the way when you reduce the window size. If that isn't slim enough for you, you can always reduce the size more.
