One thing I like about iTunes is that it when importing, it automatically makes a folder for the artist and then within that folder is a folder for the CD title, and then within that CD folder, there are the digital tracks.

Is there a way to make EAC do that?

Easy.

Go to EAC > EAC Options... > Filename tab
*or hit F9 then > Filename tab

Paste this in the "Naming scheme" box:

%A\%C\%N %T

*remove the %N if you don't want tracknumbers on your files.
