All my .mp3, .flac, .cue etc ... are opened with Foobar2000. However, the icon image of the files is still that of windows media player. It opens fine with Foobar, it's just the image that is windows media player. It is quite annoying.

Look in the directory where foobar installed. In this directory you will see a file which you can run to allow you to set foobar as your default player for whatever file type you want.

Only in 0.8 version, not in the latest one.
Sorry, neldhand, not sure about how to do it quickly. Did you try Preferences -> file types to create the association ?
Check the file type in your files properties page and then try to associate this (these?) type(s) to the Foobar icon in explorer -> tools -> options -> file types.
