Is there some device that can take Toslink and convert it to AES/EBU?

You can convert Toslink to S/PDIF
http://www.cablewholesale.com/specs/10tr-08300.htm
S/PDIF is a coaxial AES/EBU. Is that close enough for your needs?

With Google you should be able to find quite a few. What are the pieces of equipment you want to connect ?

S/PDIF can be optical as well as coax. In fact toslink connectors use S/PDIF. That converter is just converting optical into electrical.
