If you want a 100% free solution you can proceed in this way:

-DVD2AVI: create a project from your DVD so that audio track is extracted to hd
-BESWEET (I reccomend you to use the GUI): to normalize, resample and convert ac3/dts audio
-CHAPTERXTRACTOR+BESPLIT: to split your file according to chapters

U need DVD rip software, I know something like Xilisoft DVD Audio Ripper (there’re many other similar software, some free, some not), it can convert DVD to common music format, then u just need to use Nero or something else to burn them to Audio CD
xmixahlx
dvdrip on linux is the shiznit.

it will grab the audio in full or chapter format, encode to whatever you want, etc. etc.

DVD Decrypter can do this.

Edit: The above link will take you around the houses a bit, but may enlighten in ways which you would never imagine. However, if you don't fancy a bit of enlightening:

You'll find the last version DVDDecrypter on the 'Other' page at Rarewares. Unless it's a recent DVD, chances are you'll be able to rip the audio OK using 'Stream Processing'.
