I installed a .fcs to play around with, but it doesn't have a sort bar at the top of the playlist window and I don't know how to get one to appear.

Can you be more specific about what you mean by a "sort bar" ? Maybe you'll find this option useful:
File> Preferences> Display> Columns UI> Playlist View> "General" Tab> [x] Display column title
