I have a 1.6 gig AVI (XviD & MP3) file that I burned to a DVD-RW, but it only burns around 110 minutes (1 hour 50 minutes) of the video. The problem is that the DVD, like most, only holds up to 2 hours of video. Is there anyway to make it hold more than 2 hours of video?

I'm no expert, but I don't think that is your problem. DVD can hold films over 2hrs.
I would guess that this is more an issue with the converting application, and AVIs over 1GB. This is just a guess though. Certainly the length is not an issue.
What are you using to convert the AVI to DVD format? May I recommend ConvertXToDVD?

Give DVD Flick a try, it works quite well and it's free.

There was no conversion involved. I used InfraRecorder to burn the 1.6 gig AVI file to a DVD-RW as a Data DVD. I'm able to burn all files that are less than 2 hours (typical 1.5 hour movies) as a Data DVD, but not anything at or over 2 hours. On the discs themselves it says "2Hrs in SP Mode", in-case that makes any difference.
could be something to do with ISO 9660 limits (try burning with iso9660 + UDF mode with
imgburn), but i have never encountered anything similar,

2Hrs in SP Mode
that goes for standalone dvd recorders i imagine, nothing to do with data DVD's.
