Am I okay to delete the log file and cue files that EAC creates after ripping a CD to MP3?

Or does it still need it in some way?

The log is only useful for your own reference. It lets you see what settings were used during ripping and if any errors occurred.

The CUE-sheet is not really necessary. In theory it allows to reconstruct the exact length of silent gaps before the first track and between tracks, and can preserve a limited amount of metadata about the album (indepedent from ID3 tags). But in practice this is of little value. Cuesheets are important only if you're ripping an entire disc to a single [big] file and want to keep some points of reference in that file (tracks, chapters).
